Gougeres (Burgundian Cheese Puffs)

INGREDIENTS
1/2 cup water
1/2 cup milk
1/2 cup butter
Dash salt
1 cup flour
4 large eggs
1 cup Gruyere cheese

DIRECTIONS:
In a saucepan, combine water, milk, butter, and salt. Bring to a boil over medium heat. Add the flour and stir until the mixture is very thick and pulls away from the sides of the pan. Cook and stir for an additional one minute. Transfer to a bowl and cool for five minutes.

Beat in eggs, one at a time. Continue beating the dough until it is smooth and shiny. Stir in the Gruyere cheese and mix thoroughly.

To bake, drop teaspoons of dough onto a greased cookie sheet. Bake at 400 degrees for 15 minutes. Then, reduce the temperature to 350 degrees and bake until golden brown, about 10-15 more minutes.
