Spicy Meatballs and Rice
2 stalks green onion
1 thumb ginger
4 tbsp. mayonnaise
3 tbsp. sour cream
4 tsp. honey
4 tbsp. soy sauce
2 tsp. Sriracha
1 cup Jasmine rice
20 oz. ground beef
1/2 cup breadcrumbs
4 carrots
Cut carrots into 1/2" thick pieces. Thinly slice green onions, separating the whites from the greens. Peel and mince ginger.
In a bowl, combine mayonnaise, sour cream, honey, soy sauce, and Sriracha.
Toss carrots with oil, salt, and pepper. Spread over half of baking sheet. Roast at 425 for 10 minutes.
Cook the rice.
Combine beef, breadcrumbs, green onion whites, ginger, salt, and pepper. Form into meatballs, should yield about 20-24.
Add to the other half of the roasting pan and continue cooking for 14-16 minutes more.
Serve with carrots on the side and garnished with the greens from the green onion.
