Sliced Beef with Broccoli

1/2 lb. beef tenderloin, sliced across grain into 1/2-inch slices
1 lb. broccoli, broken into florets
2 cups oil

MARINADE INGREDIENTS:
1 tsp. sugar
1/2 tbsp. soy sauce
1/2 tsp. baking soda
2 tsp. cornstarch
1 tbsp. cold water
1 tbsp. oil

SAUCE INGREDIENTS:
1/2 tbsp. soy sauce
2 tbsp. oyster sauce
1/2 tbsp. wine
1 tsp. sugar
1/2 tsp. cornstarch

Place the sliced beef in a bowl. Mix the marinade ingredients together and pour over the beef, stirring to combine. Let marinade for at least half an hour.

In a small bowl, mix the sauce ingredients.

Boil the broccoli for 30 seconds. Remove and plunge into cold water, then drain and dry.

Heat oil in a frying pan. Stir fry the beef until it is done, and remove beef and drain oil from the pan.

Heat more oil in the pan and fry the broccoli. After about 10 seconds, add the beef and seasoning sauce. Stir quickly over high heat to combine all ingredients. Serve over rice.
