Honey-Butter Barbecue Pork Cutlets

4 sweet potatoes
3 tbsp. sour cream
2 tbsp. butter
4 tsp. honey
24 oz. pork cutlets
2 tbsp. barbecue seasoning
16 oz. broccoli
1 tsp. chili flakes

Dice the sweet potatoes and boil for 15-20 minutes until softened. Drain and mash them. Mix with sour cream and butter, add salt and pepper to taste.

Soften butter and mix with honey and a pinch of salt.

Dry pork with paper towels. Rub with salt, pepper, and the barbecue seasoning. Cook 2-3 minutes per side over medium-high heat. Remove from pan.

Cook the broccoli with salt in the pan until slightly crispy, 2-4 minutes. Add 1 tbsp. butter to the broccoli and mix until coated.

Serve pork with honey butter on top and chili flakes if desired.
