Egg Custard Tarts

Pastry ingredients:
3 cups flour
1/2 tsp. salt
1/2 stick unsalted butter
1 1/2 sticks shortening
4 - 6 tbsp. warm water
Custard ingredients:
3 eggs
5-6 tbsp. sugar
1 1/2 cups milk
1/2 tsp. salt
Mix flour and salt. Add butter and shortening and cut in until it resembles coarse crumbs. Add warm water and mix to form a soft dough. Knead for a couple minutes. Cut in half. Roll out to 1/8" thick and cut into 12 3" circles. Place each circle into a tart mold.
Meanwhie beat the eggs, then add the rest of the custard ingredients. Pass through a strainer and fill each tart mold. Bake in a preheated oven at 350 F for 25-30 minutes.
Remove from oven and servce warm or cooled. Makes 24 tarts.
